Coffee Pecan Loaf

This classic version of a pecan loaf includes coffee for an added taste, and the result is a cake of wonderful texture and flavour. Perfect to serve alongside your morning tea or coffee. The pecan loaf is also freezer-friendly, so why not cut it in half and save some for later.

INGREDIENTS

  • 2 cups (250g) flour
  • 2 ½ tsp. baking powder
  • ½ tsp. salt
  • ⅔ cup (135g) shortening
  • 1 cup (200g) sugar
  • 2 tbsp. instant coffee
  • 3 eggs
  • ⅔ cup (150-160ml) milk
  • 1 tsp. vanilla extract
  • 1 cup (150g) chopped pecans

INSTRUCTIONS

  1. Preheat the oven to 350 °F (180 °C).
  2. Sift the flour, baking powder and salt into a bowl.
  3. In a second bowl, cream the shortening with the sugar and instant coffee.
  4. Beat with eggs until light and fluffy. Add the flour mixture alternately with the milk and vanilla.
  5. Add nuts.
  6. Spoon into the greased loaf pan (or two small pans) and bake 55 minutes at 350° F or until the cake tester in the center comes out clean.
